In Gelato Lab’s cool rear kitchen, which opened adjacent to Pub Street in December, a couple of employees meticulously extract juice from limes for sorbet and dice fresh mint leaves for mint chocolate gelato. Simultaneously, an immaculate Cattabrigga Effe 6 softly stirs a large container of freezing milk and cream.
This motion breaks down the ice particles and incorporates air in a manner that sets gelato apart from regular ice cream. The machine was originally created in the 1920s and has yet to be surpassed.
Meanwhile, the gelatos offered showcase more traditional Italian flavors such as chocolate, pistachio, vanilla, amaretto, caramel, among others.
